  • 2 tbsps green chiles (mild, canned or fresh)
  • 1/4 tsp chili powder
  • 4 large eggs (separated)
  • 1 tbsp heavy cream (or milk)
  • 1 tbsp unsalted butter
  • 1/4 cup pepper jack cheese (grated, divided)
  • 1/4 cup cheddar cheese (grated, divided)
  • 3 tbsps tortilla chips (crushed)
  • ground black pepper
  • kosher salt
  • sour cream
  • salsa
