Fish Poppers Cesar Salad

Ingredients
  • Fish crouton (fish poppers)
  • 2 cups peanut oil
  • 1 lb catfish fillets (3, cut into 1 inch chunks)
  • 1/3 cup buttermilk
  • 1/2 cup all-purpose flour (sifted)
  • 1/4 cup stone-ground cornmeal (white or yellow fine)
  • 21/2 tsps kosher salt
  • 1 tsp black pepper (freshly ground)
  • salad (caesar)
  • 2 tbsps mayonnaise
  • 2 anchovy fillets (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic cloves (minced)
  • 1/2 tsp kosher salt
  • 1 head romaine lettuce (sliced crosswise into 34 inch wide strips)
